This a really interesting fermented coffee from Brazil.

Farm Profile: Jorge Barakat became a coffee grower by chance and fell in love with the culture. He has now been a coffee grower for more than 30 years.
Over the years, he has overcome the regular challenges of climate, water and the environment by developing a new way of producing what he calls ‘dense coffees’. The crop requires specific care as it is planted closer together. Throughout the 3 decades of experience, the coffee grower has been learning about quality processes and seeking increasingly special experimental lots, such as this hermetic fermentation.
After harvesting, cherry is pulped and fermented. Fermented parchment is washed in clean water to remove remaining mucilage. Parchment is laid to dry on patios. Depending on weather conditions, parchment may be partially dried using mechanical dryers that rigorously control temperature conditions.
